Holy Guacamole!

Sundays are easily one of my favorite days of the week. It's the perfect day to lay back, relax and watch football or trashy tv all day! I often find myself rummaging around the house for something light (and healthy) to snack on. We don't keep many snacks on hand in the house - for good reasons! But we do keep a few staple ingredients which allow me to whip something up, during halftime of course!

Though football season will soon be coming to an end, there is no end in sight for my love and obsession for avocado and even more for guacamole. I can never get enough of the cream of the avocado, the crunch of the onion, the hint of citrus and the pop of spice! And the best part about guacamole is that it can be made all throughout the year to keep at home for yourself, or to share with friends, if you don't eat it all first ;)

Whip it up yourself with a few simple ingredients! Don't forget the homemade pita chips.

INGREDIENTS:

for the guacamole //

  • 3-4 avocados (halved, seeded, peeled)
  • the juice from 1 lime and 1 lemon
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 2 roma tomatoes, diced
  • 2 tablespoons cilantro, finely chopped
  • 1/2 jalapeño, finely diced
  • 1/2 teaspoon ground cumin
  • pepper + sea salt to taste
  • worcestershire sauce (optional)

DIRECTIONS:

1. squeeze avocado out of shells and into bowl. mash avocado and lime juice together. 2. fold in garlic, cilantro, jalapeño, and onion, careful not to overmix. 3. add in seasonings and salt and pepper to taste. 4. add a few drops of worcestershire sauce. 5. top with diced tomatoes, mixing a few in but leaving some at the top. 6. sit at room temperature for an hour and serve with pita chips.

for the pita chips //

  • 6 pieces of pita or naan bread
  • 1 tablespoon extra virgin olive oil
  • pepper + sea salt to taste

DIRECTIONS:

1. preheat oven to 350 degrees. 2. cut each pita into 8 slices, similar to how you would slice a pizza. 3. toss slices in a large bowl and coat with olive oil. 4. lay pita slices on baking tray and sprinkle with pepper and sea salt. 5. bake at 350 degrees for about 20-25 minutes or until crispy.

Serve warm pita around guacamole and with a nice margarita!
