Superfood Veggie Bowls
I’m really digging bowls with rice, a ton of veggies and some type of sauce these days! It gives me Chipotle vibes… but like a homemade, healthier version, of course! I know everyone is new years “dieting” and what not, so these are great because they can be customized for whatever you are or aren’t eating at the moment. I find these convenient for lunch but also cute enough to serve for a dinner with friends. Think a veggie bar where all of the veggies and protein, if you’d like are arranged in bowls and then a a couple of sauce options are on the side. Your guests can arrange whatever type of bowl they desire and then top it off! As I’m writing this, I’m thinking about how genius that is and picking a date for a dinner with friends to do this next! lol
Anyway, you guys know how much I love a quick clean up meal and this is just that! All you have to do is roast the veggies on parchment paper in the oven - yep, that’s just 1 sheet pan - do a quick sauté of your kale, cook the couscous, quinoa or rice on the side; blend up your dressing and bam! You could definitely just opt for roasted veggies which would make this recipe even simpler! It’s whatever you’re into.
In this week's Traders visit, I came across this new Harvest Grains Blend. It’s a yummy mix of couscous, orzo, baby garbanzo beans and red quinoa. It cooks in just 10 minutes and it’s really filling and flavorful. It also adds a unique texture to your bowl that rice wouldn’t ordinarily do! Check it out and let me know what you think.

For now, let’s jump into this recipe!
Superfood Veggie Bowls with Tahini Avocado Dressing
1/2 bag Harvest Grains Blend OR 2 cups grain of your choice, cooked
2 tablespoons olive or grapeseed oil
2 beets, peeled
1 large sweet potato, peeled
4 large leaves of tuscan kale
1 can of corn, drained
Salt + pepper, to taste
Avocado, sunflower seeds, cilantro + lime for garnish
Preheat oven to 400 degrees F
Chop your beets and sweet potatoes into pieces 1/2 inch thick
Toss veggies beets and sweet potatoes separately using 1/2 tablespoon of oil each (I say separate because the beet color will bleed on the potatoes, if not! this is only for aesthetics)
Line a large baking sheet with parchment paper and arrange the veggies on the sheet so that they are not on top of one another
Roast veggies for 35-40 minutes or until soft to your liking
While veggies are roasting, cook the harvest blend according to directions on the bag, drain and set aside
Chop your kale into pieces 1 inch wide
Add remainder tablespoon of oil to a medium skilled on medium-high heat
Sauté kale for 5 minutes until it begins to wilt but is still bright green in color, season with salt and pepper, to taste
Remove roasted veggies from the oven and arrange your colorful bowl!
TIP: Top with avocado cilantro tahini dressing and garnishes of your choice! Lime juice on top sets this off perfectly.
