Breakfast Flatbread Pizza

What’s your favorite breakfast dish? I’m usually into waffles, pancakes and french toast paired with bacon… lotssss of bacon! I love a sweet bread option for breakfast and tend to order one no matter where I am! There’s just something about sweet bread with butter, syrup and fresh fruit on top that I can’t get enough of! But what about those savory options? For me, those have fallen by the waist side during breakfast and brunch so I decided to start giving them some more love lately!

I started picking up this garlic naan bread on my weekly Trader Joes run and it is so delicious! I’ve purchased it a few times in the past and forgot about it but I was recently reminded how good it is! It’s soft, packed with garlic flavor and perfect to have on hand for quick meals like garlic bread, flat bread pizza and… breakfast pizza?

What’s breakfast pizza you ask? Well… think everything you would eat for a savory breakfast like potatoes, eggs, sausage and cheese to top it all off. You can make it for brunch with the girls, when you’re having a chill weekend in the house or make ahead and freeze to warm up quickly when you’re in a rush to leave for work!

These flatbreads bake perfectly taste so good with any toppings! You could sub out the meat and just do potatoes, egg and cheese or toss on some prosciutto, beans, corn, peppers, etc! Make it your own!

BREAKFAST FLATBREAD PIZZA

INGREDIENTS

  • 1/2 cup Simply Potatoes

  • 1/2 cup turkey sausage or bacon

  • 2 eggs

  • 3-4 pieces Trader Joe’s garlic naan bread

  • 1 tablespoon olive oil

  • 1 cup shredded colby jack cheese

  • fresh thyme

  • salt + pepper, to taste

DIRECTIONS

  1. Preheat oven to 375 degrees F

  2. Cook potatoes according to the directions on the bag, set aside.

  3. Cook turkey sausage or bacon and chop into small pieces, set aside.

  4. Scramble 2 eggs and season with salt + pepper, set aside.

  5. Arrange flat bread on a medium baking sheet. Spread olive oil on each flat bread, covering entire piece of bread.

  6. Arrange all toppings in bowls for easy spreading

  7. Start with a light layer of cheese, add sprinkles of potatoes, meat and eggs around the bread and then top with remainder cheese to cover toppings and empty spaces

  8. Bake in oven for 12-15 minutes until cheese is melted and edges start to become golden brown

  9. Garnish with fresh thyme and cut into slices!
