3 Easy Summer Salads

I went home back to Maryland over the weekend for my bestie's bachelorette shenanigans! My weekend involved beach and pool time in the sun and a ton of laughs and memories with old friends. I always forget how hot and humid the summers are on the east coast. When I landed at 8 am, it was literally already 80 degrees and the air was thick and heavy. When the weather is hot and sticky like that, I just want to eat light and refreshing meals. Plus, with lots of time at the beach and pool, you don't want to feel too bloated or heavy in your bathing suit, right!? My go-to meals are fun, summer salads full of fresh ingredients. Not only are they great side dishes and easy to throw together for any dinner or get together, they add great color to your table of yummy summer BBQ!

I put together 3 of my favorite salads that will be great alongside any meal you create or perfect eaten alone! Check them out below:

Grilled Peach Salad with a Maple Bourbon Rosemary Dressing

INGREDIENTS:

for the salad //

  • 2-3 firm peaches

  • mixed greens with arugula and spinach

  • blueberries

  • crumbled feta cheese

  • sunflower seeds (or seeds of your choice)

for the dressing //

  • 2 tablespoons maple syrup

  • 1 1/2 tablespoons bourbon

  • 1 tablespoon fresh rosemary

  • 1 garlic clove, minced

  • 1 small shallot, minced

  • 1/3 cup olive oil

  • salt + pepper, to taste

PUTTING IT TOGETHER:

For the dressing: Blend the first 5 ingredients for the dressing together. Add in olive oil and stir. Season with salt and pepper. Set aside. For the salad: cut the peaches into thick slices (about 3-4 per peach) and toss in olive oil and a little splash of bourbon. Grill over high heat until grill marks appear, flipping over once to get a grill on both sides. Toss the mixed greens with dressing. Arrange greens on a platter and top with peaches. Sprinkles with blueberries, cheese and seeds.

Cabbage + Kale Lentil Slaw Salad

INGREDIENTS (all from Trader Joe's):

  • TJ's Cruciferous Crunch Collection

  • TJ's Goddess Dressing

  • TJ's Ready-to-Eat Steamed Lentils

PUTTING IT TOGETHER:

Mix together 1 bag of Cruciferous Crunch with half of the pack of steamed lentils (or more depending on what you like!). Pour in 1/4 bottle of Goddess Dressing. Mix together well. Continue adding dressing 1/4 at a time until you have the consistency you desire for the salad.

Watermelon + Feta Spinach Salad w Balsamic Lime Vinaigrette

NGREDIENTS:

for the salad //

  • fresh baby spinach

  • diced watermelon

  • sliced cucumber

  • crumbled feta cheese

for the dressing //

  • trader joe's Thyme Honey Balsamic Vinaigrette

  • fresh squeezed lime juice

PUTTING IT TOGETHER:

For the dressing: pour 1/2 cup of tj's vinaigrette in a small bowl. squeeze the juice of 1/2 lime into the bowl and mix well. Set aside. For the salad: massage spinach with small amounts of dressing. Top salad with diced watermelon, cucumber and crumbled feta. Squeeze additional lime on top of salad for extra flavor.
